Heart-warming winter comfort dinners!!

Winter is settling in and I know we all love enjoying tasty comfort meals while seated around our heater and fireplaces in our homes. This is one of our favourite things to do in my family!!

Sometimes ideas on what to cook do run out and we have a heart-warming meal that will have you and your family curled around the fireplace for longer.

Couscous and Pork shanks …. Yum Yum!!  Give it a try 

Pork shanks, couscous with vegetables and brown onion sauce on the side

Ingredients
250g couscous
¼ cup frozen Peas ( thawed)
½ cup steamed pumpkin/butternut, sprinkle a bit of cinnamon (optional)
Few tomato cocktails halved
4 to 6 Pork shanks
1 tbsp olive oil
1 small onion, thinly sliced
1 tsp minced garlic
Fresh rosemary, finely chopped
Robertson Steak& chops spice
Salt and pepper
250g Knorr brown onion soup mixture
1 tbs tomato sauce or paste
1tbsp chutney
1 tbsp sweet chilli
1tbsp soy sauce

Method
Prepare couscous according to the package

In a mixing bowl, mix together the couscous, peas, pumpkin/butternut and tomato cocktails together and set aside.

Season the pork shanks with, the steak & chops spice, rosemary, minced garlic, salt and pepper
Heat oil in a nonstick pan on medium heat. Saute the pork shanks until they turn brown, about 15 minutes. Make sure you don’t burn them. Sprinkle with soya sauce and continue to cook. Transfer the pork shanks into a baking sheet.

Whisk together the tomato sauce, chutney and sweet chilli sauce. Baste the pork shanks with this mixture. Leave some for the brown onion sauce

Preheat oven to 180C

Roast the pork shanks for 40 to 60 minutes
