Yummy Hake, bacon and avocado Salad by Fun Foodie Pholosho Matondolo

Adorned caught up with an avid food lover who is a whizz in the kitchen and loves everything about good food! Better described as a ‘fun foodie’ who is absolutely passionate about cooking, Pholosho Matondolo brings to her craft – a great ability to delight. Her marvellous creations, served with love and laughter, make healthy eating seem so easy. To top it off, being a non-meat-eater herself, she still makes the most delicious meat dishes!

She often says: “When passion speaks, nothing can stop you”. What keeps her going is her love for cooking. She enjoys cooking for her husband, family and friends “and for everybody too” she says.

Pholosho loves exploring different food cuisines and her experience in the hospitality industry both locally and internationally opened her eyes to the abundance of creativity to be discovered in cooking. This experience taught her that when you are passionate there is no limit.

She strongly believes that cooking comes from within – an idea instilled in her from a young age. She also believes that her knowledge of food and creating new simple recipes is a gift from God. Her love for serving God and people is what drives her. It brings her joy to be able to share her knowledge and ideas for simple, fresh recipes with everyone.

So for the first Recipe from Pholosho “Fun Foodie” for us – she thought a quick healthy yet delicious recipe will work, which the whole family will lap up and still want more.

avocado salad

Yummy Hake, bacon and avocado Salad

Ingredients
2tbsp olive oil
200 g (2 hake fillets)
1/2 cup fried crispy bacon, cut into thin strips
Salt and pepper
60 g crispy lettuce leaves
1/2 cup red bell pepper, sliced into thin strips
1/2 cup yellow bell pepper sliced into thin strips
1/2 cup, sliced mushrooms, cooked
1 medium avocado cut into medium strips
Few cubes of feta cheese

Instructions
Heat oil in a non-stick frying pan
Put the fish in the pan and fry for 1 to 2 minutes on each side.
Season with salt and pepper
Remove from pan and pat with kitchen paper. Cut the fish into bite-size pieces carefully and set aside

Dressing recipe
1/4 cup Sweet chilli sauce
2 tblsp Soya sauce
1 Fresh lemon, freshly squeezed
Whisk all together
Place the lettuce, peppers and mushrooms on a platter dish or bowl, add the crispy bacon and fish
End with the avocado and feta.
Sprinkle with black pepper (optional)
Dress with the sweet chilli dressing and serve.
