Known for his unique creations in the kitchen, Chef Genghis San’s Valentine’s Day Dinner at RED Rosebank’s OUI BAR + KTCHN is a four-course set menu of gastronomic proportions. Start your meal with freshly shucked Knysna oysters dressed with a sundried tomato and chilli pesto on a strawberry and Asian green salad, a trio of salmon done three ways — smoked, seared and ceviche, or grilled asparagus accompanied by goat cheese and candy-roasted walnuts. Other highlights include a lemon and lime sorbet palate cleanser and sharing platters, one of which is piled high with lamb chops, beef short rib and chicken galantina surrounded by pommes anna, heirloom carrots, tenderstem broccoli, beetroot jus and cheese sauce. (The vegetarian option pays homage to the Mediterranean diet and features vegetable crisps, hummus and baba ghanoush, amongst others.) For a sweet ending, the chef has prepared a secret decadent dessert in the form of a DIY platter for two.
